			<content:encoded><![CDATA[<p><br/><br/>This healthy and tasty menu and recipes features an entree of Lemon Tilapia Fillets with Unfried Green Tomatoes, Colorful Bell Pepper Salad, and Buttermilk Pie for dessert.<br/><br/><strong>LEMON TILAPIA FILLETS</strong><br/><br/>4 tilapia fillets (approx. 5 oz each)<br/><br/>1/2 tsp salt<br/><br/>1/2 tsp pepper<br/><br/>2 lemons; slice into 6 slices each<br/><br/>1/4 cup shredded carrots<br/><br/>2 tbsp chopped fresh dill<br/><br/>2 tbsp chopped fresh parsley<br/><br/>4 tsp butter<br/><br/>Heat oven to 400 degrees.  Sprinkle tilapia fillets with salt and pepper.  Cut 4 pieces of parchment paper into 13&#8243; x 9&#8243; rectangles.  Place 3 lemon slices crosswise in the center of each parchment rectangle.  Top lemon with the fillets.  Sprinkle carrots, dill and parsley evenly over fillets.  Top each with 1 teaspoon butter.  Fold parchment papers to make packets.  Crease the folds but leave enough room for air to circulate.  Place plackets on a baking sheet and place in oven.  Bake 18 to 22 minutes or until fish is opaque throughout.  Serve immediately.<br/><br/>Serves 4.  Per serving:  174 calories, 29 g protein, 1 g carbs.This recipe is adapted from a recipe in Cooking Light Magazine.<br/><br/><strong>UNFRIED GREEN TOMATOES</strong><br/><br/>1/4 cup flour<br/><br/>1/4 cup yellow cornmeal<br/><br/>1/8 tsp salt<br/><br/>1/4 tsp fresh ground black pepper<br/><br/>Dash of Splenda<br/><br/>3 green tomatoes, sliced into 1/2-in thick slices&#8211;should have 15-16 slices<br/><br/>1/3 cup fat-free milk<br/><br/>Cooking spray<br/><br/>Preheat oven to 400 degrees.  In a shallow dish, combine flour, cornmeal, salt, pepper, and Splenda.  Pour milk into a small bowl; dip tomato slices, one at a time, in milk then dredge in flour mixture.  Lightly coat both sides of tomato slices with cooking spray.  Place a baking sheet in oven and heat for 5 minutes.  Remove from oven and immediately coat with cooking spray.  Place tomato slices on sheet.  Bake at 400 degrees for 25 minutes, turning about half way through cooking time.<br/><br/> <br/><br/><strong>COLORFUL BELL PEPPER SALAD</strong><br/><br/>1 medium green bell pepper, seeded and diced<br/><br/>1 medium red bell pepper, seeded and diced<br/><br/>1 medium yellow bell pepper, seeded and diced<br/><br/>1/2 cup diced red onion<br/><br/>1 can whole kernel corn, drained<br/><br/>1 can black beans, drained and rinsed<br/><br/>1 garlic clove, minced<br/><br/>1 tsp chopped cilantro<br/><br/>1/4 cup olive oil<br/><br/>4 tbsp red wine vinegar<br/><br/>1 tsp lime juice<br/><br/>freshly ground black pepper<br/><br/>In a salad bowl, combine bell peppers, onion, corn, garlic and cilantro.  Toss to mix.  Add olive oil, vinegar and lime juice.  Add black pepper and toss again.  Add beans and toss to mix well.  Chill before serving.<br/><br/> <br/><br/><strong>BUTTERMILK PIE</strong><br/><br/>1 9-in unbaked pastry shell<br/><br/>1 3/4 cups Equal Sugar-Lite<br/><br/>1/4 cup all-purpose flour<br/><br/>1/4 tsp salt<br/><br/>1/2 cup butter, melted<br/><br/>1 large egg<br/><br/>1/2 cup egg substiture<br/><br/>1/2 cup low-fat buttermilk<br/><br/>1 tsp vanilla extract<br/><br/>1 tsp lemon extract<br/><br/>Preheat oven to 350 degrees.<br/><br/>In a medium mixing bowl, combine Equal, flour and salt.  Add butter, egg and egg substitute.  Beat slightly with a rotary or electric mixer.  Stir in buttermilk, beating with a wooden spoon.  Blend in flavorings.  Pour into pastry shell and bake 45-50 minutes.  Allow to cool before slicing.<br/><br/> Enjoy!<br/><br/></p>

			<content:encoded><![CDATA[<p><br/><br/>Salmon has become very popular now because of the abundance of information out there about the importance of Omega 3 fatty acids – good fats – in our diets, to combat disease and ensure healthy brain structure and function. (Especially important if you’re – er – getting up there in years).<br/><br/>Salmon is the ideal food, high in those Omega 3’s, as well as vitamins, minerals and great protein. Plus, it’s got a rich, delicious flavor. Many people who aren’t fish fans do like salmon. So here&#8217;s a sample of one of our super-quick salmon recipes. They really do the trick – for both yumminess and nutrition. Not to mention easy.<br/><br/><strong>Easy Salmon Patties</strong><br/><br/>These patties are pan fried, and are very easy. I use olive oil as much as possible – it has lots of nutrients as well. Much better than standard vegetable oil.<br/><br/><strong>You need:</strong><br/><br/>One 7.5 oz. can of wild Alaskan sockeye salmon<br/><br/>(Or again, you can use leftover fresh salmon)<br/><br/>3 Tbsp of milk<br/><br/>¼ cup of bread crumbs<br/><br/>One egg, beaten<br/><br/>2 Tbsp of olive oil<br/><br/>Optional ring of red pepper<br/><br/>Optional slice of red onion<br/><br/>Salt and pepper to taste<br/><br/>A little mayo is optional, to taste<br/><br/>Romaine lettuce leaf<br/><br/>Slice of low-fat cheese<br/><br/>Heat olive oil in a fry pan. Remove any bones, and flake the salmon into a bowl with a fork. Add milk, bread crumbs, beaten egg, salt and pepper (other seasonings that you like can be added too). Form into patties and fry on both sides in the olive oil until brown. You can also cook the slice of red pepper and onion until tender (or serve raw if you prefer). When almost done, add the slice of cheese and let it melt. Top the patties with the red pepper, onion, and leaf of romaine lettuce. You can either serve as is, or on a whole-grain bun. You can bake, fry, grill or smoke catfish.<br/><br/>If you have recipes that sound tasty, chances are that they will be very tasty.<br/><br/>One recipe that you might enjoy trying because it is so good is the:<br/><br/>Grilled Catfish Barbecue.<br/><br/>You will need:<br/><br/>Two pounds of catfish fillets<br/><br/>1 T brown sugar packed<br/><br/>1 t seasoned salt<br/><br/>1/2 t pepper<br/><br/>1/2 t garlic powder<br/><br/>1/2 t onion powder<br/><br/>2 t Worcestershire sauce<br/><br/>1/4 cup of vinegar (cider)<br/><br/>1/4 cup ketchup<br/><br/>1/4 cup canola oil<br/><br/>Place the catfish fillets in a pan so they are not overlapping each other.<br/><br/>In a separate bowl, mix the brown sugar, salt, pepper, garlic powder, onion powder, Worcestershire sauce, vinegar and ketchup together. Add the oil and beat hard to make the mixture slightly foamy.<br/><br/>With a brush, coat the catfish fillets with the mixture and retain the rest for the other side. Place the pan in the refrigerator for 15 minutes, then take them out, and flip them over.<br/><br/>Brush the mixture on the other side and place in the refrigerator for another 15 minutes.<br/><br/>Save the leftover mixture for grilling.<br/><br/>Spray the grill with a non-stick spray. Place the grill five inches from the coals and place the catfish fillets on the grill.<br/><br/>Brush some more mixture on the fillets. Shut the cover of the grill and cook for six minutes. Open the cover, flip the fillets, and brush with the mixture.<br/><br/>Go the cover and cook another 6 minutes. Serve immediately.<br/><br/>There are many different recipes for catfish, but some might take a little longer to make than others. If you want something that is great for meals, you might enjoy this recipe:<br/><br/>Tacos Catfish Style<br/><br/>You will need:<br/><br/>One pound of catfish fillets cut into one-inch strips<br/><br/>1 cup of cabbage, shredded<br/><br/>1/2 cup of cilantro, chopped<br/><br/>1 cup of cornmeal<br/><br/>1 Tablespoon chili powder<br/><br/>1 Tablespoon Cajun seasoning<br/><br/>1/2 cup of corn oil<br/><br/>1/2 cup of mayo<br/><br/>2 Tablespoons salsa<br/><br/>Tortillas (small)<br/><br/>In a bowl, mix the mayo and salsa together and set aside. In another bowl, mix together the Cajun seasoning, chili powder and cornmeal and set aside. Heat the oil in a fry pan.<br/><br/>Wash the filets under cold water and coat with the mixture with cornmeal. Fry about four minutes aside until crispy and brown.<br/><br/>Remove from the fry pan and get sit on some paper towels. Heat the tortillas over a medium heat in a non-stick pan. Each side should take 30 seconds.<br/><br/>Place two tortillas together, add some cabbage, some catfish, and then add the cilantro. Add one tablespoon of the mayo mixture. Fold the shell in half and enjoy.
